Chickpea and Spinach Curry Recipe

Ingredients:



2 tablespoons olive oil


1 onion, finely chopped


3 cloves garlic, minced

1/2 teaspoon chili powder (adjust to taste)


1 can (15 oz) chickpeas, drained and rinsed


1 can (14 oz) diced tomatoes


1 cup vegetable broth


4 cups fresh spinach leaves, washed and chopped


Salt and pepper, to taste


Fresh cilantro, for garnish


Instructions:



In a big skillet over medium heat, warm up the olive oil. Add the chopped onions and cook for about 5 minutes, or until they become transparent.


Add the cumin seeds, grated ginger, and chopped garlic; simmer for a further two minutes, or until fragrant.


Toss to mix the onions and spices with the ground coriander, turmeric, garam masala, and chilli powder added to the skillet.


After adding the chopped tomatoes and vegetable broth, boil the mixture. Cook until the sauce slightly thickens, about 5 to 7 minutes.


Stir the drained chickpeas into the sauce in the skillet after adding them. To give the flavours time to mingle, simmer for ten more minutes.


Add the chopped spinach leaves to the skillet right before serving, and stir until the spinach wilts. To taste, add salt and pepper for seasoning.


Serve the Chickpea and Spinach Curry hot, along by naan bread or steamed rice, and garnish with fresh cilantro leaves.
